Give me two types of anime (or manga)

First, I want an anime solely related to dreams, not Yumekui Merry - just not my type.

Second, I want an anime somewhat or solely (which will get you excited every other episode) related to mecha eg. Gundam 00, Evangelion and Tengen Toppa Gurren Lagann...

PS, I didn't like Gundam Seed/Destiny - way too slow.

For your dream request, try Yume Tsukai. It's not a classic, but I rather liked it.

For mecha, you def want to check out Break Blade(Broken Blade).
IMO the best mecha series there is.
It is however a series of films.

For Mecha I'll Second Code geass. The characters are extremely interesting and the main characters quest is something no one other than him could dream of.

Fullmetal panick is something I just couldn't put down. It has some of the best comedy, imo.

And if you happen to try Yume Tsukai and liked it, you could try it's manga predecessor, Discommunication: Seirehen(which Yume Tsukai was derived from).
